Beef & noodles

2-3 cups roast gravy
1-2 cups cubed leftover roast
1 pkg egg noodles

Heat gravy and roast. Cook noodles according to directions. Mix & serve.

You can use a packaged beef gravy mix. Also, any leftover pasta like spaghetti would work. Sour cream can be added, but we never felt the need to.

Ham Fettuccine Alfredo

Makes 4-6 servings

  • 1 pound dry fettuccine pasta
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 2 cups diced, cooked ham
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
Cook pasta according to package directions.

In a sauce pan, melt the butter with the garlic. Saute for a minute or so and add ham. Stir and cook until ham is heated. Then, stir in the cream, and again, heat, but do not boil. Add parmesan and stir until this thickens a bit. Toss with cooked pasta.

*** Any pasta can be used in this recipe. I especially like spinach fettuchini, but don't often have it on hand. You can also use this recipe for chicken or other meats. This is a very versitile alfredo sauce. Can also used milk or reduced fat milk, although the texture will be thinner. Do not have to use this amount of pasta, either - if you've only got 12 oz, it'll be just fine. :) Also, any ham will do for this - even lunchmeat - and the amounts are approximate. You can easily use less and still have a satisfying meal. Leftovers of this tend to be greasy, though, so you want to make just enough for tonight. Or, you could skip the meal altogether, and use this recipe as a side dish. :)***
